Broccoli and Stilton soup is a firm favorite and now the autumn is drawing closer it will be back on many a home menu. This delicious soup is incredibly easy to make and the quantities can be adjusted to suit your taste. This recipe is quite easy on the Stilton and in the finished soup it adds amazing flavor but is not over powering. If you are a cheese lover you can simply add more of the cheese in to the mixture for a stronger taste. Make it in batches and pop in the freezer ready to defrost for a quick yet tasty meal.

- 1 Broccoli
- 1 Medium Potato
- 1 Medium Onion
- 60g Stilton
- 500ml Vegetable Stock
- 1 Tbl Spoon Plain Flour
- 200ml Milk
- 1 Tbl Spoon Double Cream
Step 1 : First you should peel and roughly chop your onion. Next, peel and cut your potato into small chunks and then cut your Broccoli florets in to small pieces. A lot of it will disintegrate but use it all anyway.
Step 2: Add a splash of olive oil to a pan and heat it on the hob. Add the ingredients you just chopped to the pan and cook for about 6 minutes. Stirring well.
Step 3: Make up your vegetable stock and set to one side for a moment. Sprinkle your flour over the cooking veg and once this has been absorbed add your vegetable stock. Let this simmer for about 30 minutes.
Step 4: Crumble the Stilton into the pan and then add the milk. Stir very well and simmer for a further 5 minutes.
Step 5: Finally add your cream, stir and then pour the soup in to a blender. If you prefer a chunky soup then just give the blender a miss. Give it a good blitz and then serve in warm bowls.
Note: If you intend on freezing the soup don’t use the cream. Wait until you have defrosted it and add whilst warming in the pan.
This soup goes particularly well with either white or brown bread. You could even have a go at making stilton croutons by melting Stilton on to French toast and then cutting it into small chunks and adding to your soup.
